I combined the pork shank and cheek to cook this dish.
The pork shank and cheek were initially proceeded by searing on the skin under high heat until all the outsides were browned before braising.
Cut the pork shank and cheek to fine chunks and place in a large bowl.
2. Prepare the fragrant spices for marinade
Smash and thinly slice lemongrass stalks and chili. Peel and smash turmeric.
All of these ingredients including minced galangal, seasoning, sugar (you can add more if you like sweet), fish sauce, fermented rice and shrimp paste are marinated in the meat bowl. Well mix and set aside for 20 minutes.
3. Braise the meat mixture
Pour some oil in a preheated saucepan over high medium heat to add minced garlic and turmeric in it with a nice smell, add and frequently stir-fry the meat mixture for 10 minutes until the meat is firm and melted by spices.
Pour water to ensure the meat is barely submerged. Cover, reduce heat to low and simmer until the meat is tender for 20 minutes.
4. Serve the dish
You see I have a tasty and flavorful dish but not less healthy.
