Preparing the piping bag is the first step of any cupcake or cake decoration. Cut off the bag tip, insert the piping tip you want to use to the bag, fill 2/3 to 3/4 of the bag with frosting, twist the other end of the bag to secure frosting inside the bag and press to push frosting down to the piping tip.

If you use a tip coupler, after cutting off the bag tip, insert the inner part of the coupler into the bag, then attach the piping tip you want to the outer part of the coupler and screw it onto the inner part to secure the tip. When you want to change tip, just unscrew the coupler and switch tip and screw it back again.

Now, I will talk you through each cupcake piping technique. After some practice you will find yourself performing these techniques with ease.

1. Decorating Rose with the petal tip

To perform this rose decoration you need the flower nail and the flower lifter. You will pipe the flower on the flower nail and then transfer it to the cupcake with the flower lifter.

  • Hold the piping bag in your dominant hand and the flower nail in the other hand.
  • Angle the piping bag around 45 degree to the flower nail base.
  • Make the center bud: with the wide end of the petal tip touching the flower nail base and the narrow end pointing up and slightly inward, press the bag and rotate the flower nail counterclockwise to create a cone at the center of the nail base. Repeat to make 2 more cones on top of the first one because you will make the rose a little bit above the base so that it won’t be damaged when transferred to the cupcake.
  • Make the rose petals: rotate the flower nail and pipe a half circle covering the end point of the center bud to create the first petal. Repeat to make the second petal overlapping half of the first one. Keep piping the other petals in the same way until you obtain a rose of your desired size.
  • Pipe some frosting on top of the cupcake to create a base for the rose then use the flower lifter to transfer the rose from the flower nail to the cupcake top.
